The grapes
The grapes grow in the higher part of our winery at an altitude from 750 m a.s.l. to 850 m a.s.l. with east/south-east exposition. Thanks to its position below the Juval castle, the vineyards benefit from a unique microclimate with high daytime temperatures and cool nights give the wine a spicy aroma and preserve the grapes acidity.
In the cellar
In the cellar we prioritize an unadulterated development of the wine character in stainless steel barrels. We allow the young wine to ferment slowly through a moderate cool-down process in which the wine sits on its natural yeasts.
The wine
The wine seduces with its complex and fruity aroma of pear, lime and a scent of nutmeg. On the palate has balanced mineral notes, a bit spicy and long lasting. Pairs well with light dishes. It’s particularly good after two years of bottling.
