Castel Juval Riesling Vineyard Windbichel 2015
The grapes
The grapes grow in a very steep and rocky area on the hill of Juval, exposed to the south at an altitude from 700 m a.s.l. to 750 m a.s.l. In the highest situated Riesling vineyards the grapes ripen thanks to a unique microclimate with strong airstreams and temperature changes between day and night. For the wine CASTEL JUVAL RIESLING WINDBICHEL we selected only the ripest and juiciest grapes.
In the cellar
In the cellar before pressing the grape mash depending on the vintage, we allow the peel to sit for some hours with the juice in order to permit the flavor-enhancing constituents to emerge. We store the wine in stainless steel barrels to preserve it unadulterated. We allow the young wine to ferment slowly through a moderate cool-down process in which the wine sits on its natural yeasts until the bottling, then it is stored an additional 12 months in the bottle.
The wine
The wine is the result of the careful monitoring of the ripe grapes and the awareness that the ‘Windbichel’ vineyards give a unique aroma to the Riesling grapes.
It amazes with intense notes of peach, ripe pineapple and dried orange peel. On the palate has a very juicy taste and mineral notes. Pairs well with Asian dishes, white meat or enjoyed alone. It’s particularly good after five to six years bottling.
