Duett
The grapes
of the Pinot Noir variety grow in the Juval vineyards at around 650 meters above sea level, while those of the Riesling variety come from the vineyards at Ansitz Kasten near Castelbello. Both vineyards share the typical Venosta Valley soil of glacial debris on gneiss rock, as well as the airy location on the slopes of the Sonnenberg.
In the cellar
the base wines are created through careful whole-cluster pressing and slow, chilled fermentation. In the summer of the following year, we fill the tirage from the two base wines, yeast and a little sugar into sparkling wine bottles for the second fermentation and then store them for 36 months in a mountain tunnel at 7 to 8 degrees, allowing the valuable flavor-giving ingredients of the yeast to pass into the young sparkling wine. Finally, the yeast is removed after several weeks of riddling, during which it collects in the top of the bottle and is then shot off at the sparkling wine's own pressure of more than 5 bar.
The wine
is characterized by fresh, delicate fruit aromas such as apple, pear and citrus fruit as well as a fine note of yeast, animating acidity and a creamy finish.
