In the cellar
The cornelian cherries from Castel Juval Unterortl ferment in the cider during the entire first fermentation in stainless steel tanks. The result? A red-violet cider with a subtle acidity that expresses the notes hidden in the cornelian cherry. The two fruits are blended with Topaz apple juice in the second fermentation to create a fruity and slightly tannic cider.
